The love of people, great food and crafting the perfect modern cocktail inspired Brendan Dillon and Dennis Kingatti to open Hamlet and Ghost in Saratoga Springs. The origin of the restaurant's name is as distinctive as its dishes: "Hamlet and Ghost is something my partner found, and it comes from a phrase 'A town without a tavern is like a Hamlet without the ghost,' " Dillon said. The business almost closed after a fire in 2017, but Dillon and Kingatti chose to rebuild.
