LAGUNA BEACH, Calif. — Fresh, colorful cocktails and delicious seafood right on the water in Laguna Beach. Jose Martinez has been looking at this view since 1995. He has been behind the bar for 25 years, a constant in the long history of Las Brisas.

“I don’t want to go nowhere. I want to stay here for who knows, the rest of my life,” said Martinez.

He says he sees many returning customers, from children who now are grown and bring their kids, to people who got married here.

“Five years later they come back with their two beautiful kids and now I see the kids growing up and the kids keep coming back,” said Martinez.

His connection to the guests and his famous margarita even earned him the nickname 'Jose Cuervo,' which stuck all this time.

“She goes, ‘I’m going to call you Cuervo like tequila,’ and I was shy and was young you know,” said Martinez.

Martinez says the recent remodel of the restaurant and the menu keeps these regulars wanting more. Chef Jonathan Vasquez says they kept the Mexican seafood staples known at Las Brisas but gave them a new, modern twist.

“Using the product that we have, but using it in a different twist of a young mindset I would say,” said Vasquez. He says the restaurant needed to change with the times and focus on a chef driven menu.

Of course, you have to get a seafood dish being this close to the water. It is fresh and high quality, like the scallops cooked to perfection.

“We include seafood in it, but having the same ground of old school Mexican cuisine,” said Vasquez.
